Broccoli Spring onion & cottage cheese Ravioli... from scratch!o








Well,
a really good dinner of ravioli and an entire free day the day ahead kind of pushed me into thinking...maybe..i can make ravioli at home.Im not a great cook, well not even a regular cook I should say, just make the odd unnecessary but fatty side snacks...sometimes...Happened to watch the cookery show, and guess what were they cooking? No prizes for guessing...so ravioli it shall be tommorrow.

The next afternoon , i made the dough , amused cook staring at me so serious in his domain.
let it rest, let it rise,rolled it out...made the stuffing on the side ,put the stuffing, cut it cooked it and then cooked the curry...phew! This has been a few weeks ago, and now typing it down, seems like i really did do a LOT of hard work!!!
Was I happy? well , had to have some bread, so i made some garlic BUNs to go with it,
Then...there had to be dessert, so I tried baking a "low" fat cake ( to shrug off the guilt of all the cheese and butter) .The cake flopped! miserable it was, though the husband did try to say, its just too much food, cant possibly have anymore!

Well, how did it go?
The ravioli was really good , the husband said. The down side was that it was chewy. See,im not great at rolling out the dough thin. Plus, i made the dough with plain APF(I used maida).
Doing some research later, it turned out that Were supposed to use semolina(rawa) in it
The stuffing , the sauce were nice and creamy.

Home cooked Spring onion & cottage cheese Ravioli with garlic buns
Ravioli
Maida ( 200gms/)


Ravioli stuffing

Cottage cheese (paneer) 2oogms
Onion 1 medium
Spinach 2 or3 chopped fine
cheese grated 2spoons

Sauce
Grated brocolli 1/2 bowl
spring onions sliced 4-5
red chillies sliced 3-4
milk 1glass
oregano 2tsp
italian seasoning as needed


Ravioli stuffing.
In a non stic pan, put the butter,spinach and cook for a minute or two.Add the paneer, the grated cheese & salt to taste.Take it off the stove.

Ravioli
Roll the dough out,as thin as possible.Decide the shape of your ravioli and cut with cookie cutter. .Place some filling on one,leaving a periphery for sealing it.Wet the periphery with water & place another piece of cut dough on it.

To cook the ravioli, take a pan, boil water in it, when it boils, dip the ravioli for a minn or 2 till it floats to the surface. Take it out, drain it on a tissue

Sauce.
Put 2 tbsp butter.When heated , add the spring onion. Fry for sometime and add the brocolli. Add the red chillies .Cook for a while. Add the bay leaves. Pour a glass or 11/2 of milk . Add some cream if you lack any self restraint. Add seasoning as per taste(the red chillies were spicy) .Grate some cheese ( or a lot of it) .

To serve.:
Place the ravioli in the serving plate and pour sauce over it. Serve Hot.

FINALLY...
its the last day to send a post to this months tried and tested....as obvious from my blog, Im not a great blogger...at least not a great active blogger...but Ive been addicted to blogging for the last two months...following reading, reading some more...and then some more.Its crazy, if im not reading blogs, Im fantasising about reading them, waiting to get back home to read them...and waiting to read them again!!!

So finally, around ten days ago, i decided to take the plunge and take part in a blog event..I love Aparnas blogs, not only for the great food she cooks ,but because she tries to adapt so many recipes to being eggless...i started obsessing which recipes i would cook ...TEN days...plenty PLENTA time.... ILL cook the exotic stuff.... Ten days are dead, this is the last minute . and I just about managed to make this sandwich.......which by the way, I had completely dismissed after BARELY reading it.. tooo simple , whats in it.....

WELL well ..well..I learnt it the tough way. WE got up behind schedule today, were out of bread,....i managed the bread last minute, husband ready to leave (very serious situation, considering he was behind schedule) and i realise .....The mixer wont work......Did i mention I dont really cook much ....well the mixer wouldnt work!!!i ground the green chutney in a stone mortar..and grated the onion!!!!!
Lesson learnt... do Not take ANYTHING for granted...
Result...HAPPY HAPPY, hubby loved the sanwich...i realised a little tweeking with simple ingredients can really lead to awesome taste..
I just hope IM not late for the event now :)
The pictures are C***... but I was on fifth gear right then..the efficiency will improve as I get along!!!

well...fter strting my blog, this is the first post in a month nd half.!!!!!! not tht i Hvent cooked...not that im not following others blogs..I just felt I never had anything substntial to write about...
But thinking of the stuff ive tried, maybe I really should write soon..planning a post about the cake I bked for dearest V . will do it soon... s of now, just breaking the jinx.
